Low-Fat Pesto!!!



1 tbsp toasted pine nuts
1 cup well packed chopped fresh basil
1 tomato, chopped
1/2 tsp salt

Combine everything and mix using a hand-held mixer. Pour over pasta or roasted new potatoes. Yum!
